Pai Mu Tan
Pai Mu Tan is probably the best-known Chinese white tea and a classic from the southern province of Fuding.
The mix of green and brown (oxidised) leaves and silver tips are typical for a good Pai Mu Tan (also occasionally spelt Bai Mu Dan).
Very refreshing and clean with a slightly fruity-grassy flavour. The taste is surprisingly rich and complex.
White tea leaves are full of antioxidants and vitamins.

|Ingredients||70-80°C, 2 tea spoons/cup, 1-3 minutes, 2-3 infusions|
|Ingredients Line 2||Iced Tea: take required amount of tea (be generous), do not use hot water just cold water (filtered or bottled water is best), pour over the leaves and let infuse for 45-60 minutes, keeps refrigerated for 2-3 days.|
|Ingredients Line 3||If you want to go crazy make ice cubes with the finished tea and add to the tea when needed or add to other drinks and cocktails.|
